What's Better than Peanut Butter and Chocolate?

So, I usually bake with the kids in tow, but confession: most times I prefer to bake alone. That's when I can really retreat into baking zone, a dreamy, happy place in which I love to dwell. Times when I get to do that make me question not going ahead for a Baking cert from the New England Culinary Institute when I was first trying to decide what to do after leaving my PhD program.

I had a few hours to spare this week to make some chocolate/peanut butter cupcakes for my friend Whitney's birthday. I once again got the recipe from Joy the Baker. Since I'm not 100% vegan all the time, I often make a recipe as is first and then if I feel confident and like it enough, I attempt to veganize it. However, this one I decided to go vegan from the beginning. The cupcake recipe was already vegan, using oil in place of eggs. And man, it's a good base chocolate cupcake. I will definitely use it again. I veganized the peanut butter icing by using Earth Balance's buttery sticks in place of butter, vegan confectioner's sugar and vegan peanut butter cups. The latter were amazingly easy to find since Wheatsville had a well-stocked Sjaak's endcap.

These babies turned out great.

Like I said, I'll definitely use the cupcake recipe again and am going to be happy exploring a variety of icing flavors for the tops.
