So, after posting yesterday, I got inspired to go ahead and make those cookies I mentioned!
Erin improvised a chef's hat with a pull-up to set the mood.
We were making Joy the Baker's peanut butter and jelly cookies.
Theyr'e flourless. That's because they only contain 1 cup of pb, 1 cup of sugar, 1 egg and teaspoon of baking soda. Then you add the jelly on top.
FYI, Erin did most of those jelly dollops by herself. Fine motor skills abounded yesterday.
I didn't really know how the cookie would work. Would they firm up enough to be a true cookie? The answer is yes. And they are good, though I burned my mouth on hot jelly giving the first cookie a taste.
